Food Science integrates many of the natural sciences such as chemistry, physics and biochemistry with the principles of engineering to help understand many of the physical processes involved in new food product development, food processing, food analysis, manufacturing and storage. Food Scientists work on the discovery of new bio-active ingredients and their incorporation into functional foods and ensure that all new products are safe and free from contamination. They also study how flavours and colours develop when food is baked, roasted or fried.

This program will give you the skills and knowledge needed in developing scientific methods used in the field so you will be able to successfully and confidently take on the many roles of a Food Scientist.

Program Requirements

This program is intended for those students interested in the multidisciplinary field of food science. The courses are integrated to acquaint the student with food processing, food chemistry, quality assurance, analytical procedures, food products, standards, and regulations. The program prepares graduates for employment as scientists in industry or government, in regulatory, research, quality assurance, or product development capacities.

Graduates have the academic qualifications for membership in the Canadian Institute of Food Science and Technology (CIFST). Graduates of the Food Science Major with Food Chemistry Option can also qualify for recognition by the Institute of Food Technologists (IFT) and the Ordre des chimistes du Québec (OCQ). Food Chemistry Option is completed to 90 credits with free elective courses.

Over the course of three years (U1, U2 and U3), students will complete a 90-credit degree. For students from high schools outside Quebec, a 30-credit freshman year (called U0) will be added at the start of your studies (making this a four-year, 120-credit degree).
